These 2-ingredient cookies are incredibly easy to make using blanched almond flour and maple syrup. Optional chocolate chunks can be added for extra flavor. Enjoy these gluten-free and vegan treats baked to a light brown perfection.
Preheat the oven to 120°C and line a large baking sheet with parchment paper.
In a large bowl, add almond flour and maple syrup, then mix well.
Check the dough consistency. If it's too dry, add a little more maple syrup (about 1/2 tbsp).
Place the dough between two sheets of parchment paper and roll it out with a rolling pin.
Cut out circular shapes or your desired shape and top with chocolate chips (optional).
Place the cookies onto the prepared baking sheet.
Bake for 25 minutes or until cookies are light brown and the surface is firm.
