A delicious vegan pizza made with a beetroot base. The dough is prepared with roasted beet, warm water, active dry yeast, all-purpose flour, maple syrup, and salt. Once the dough is prepared, it is topped with homemade pesto and assorted vegetables, then baked to perfection.

Instructions

1: Roast the beetroot.

2: Blitz in a food processor until smooth.

3: In a bowl, add water and yeast. Let sit for 5 minutes until the yeast is activated.

4: Once activated, add in the pureed beet, maple syrup, salt, and flour and mix.

5: Knead for a few minutes until the dough is smooth.

6: Form dough into a ball and place in a bowl that is lightly sprayed with oil. Cover with a kitchen towel for an hour.

7: Make pesto (if desired).

8: Preheat oven to 200 degrees.

9: Once the dough has doubled in size, flour your workspace and roll out to about 12 inches and place on parchment paper.

10: Spread on pesto and top with veggies.

11: Place in oven and bake for 12-15 minutes.
