These nests are perfectly sweet, packed full of fibre, and make a delicious snack or dessert. They involve a fun activity for the Easter holiday, providing a great project to do with your child.
Reserve some of the water from the dates.
In a blender, blitz up the dates, cocoa powder, oats, and peanut butter. Slowly add some of the date water until you get a smooth consistency that holds together. If it’s too wet, add more oats; if too dry, add more date water.
Roll the mixture into balls and then flatten to form a thick disc.
Make a slight dip in the middle of the disc.
Add some melted chocolate to the middle of the disc and top with crushed mini eggs (or keep whole).
Refrigerate for 1 hour and enjoy.
