1: In a bowl, mix the flour, bicarbonate of soda and baking powder together.
2: In another bowl, add the mashed bananas, oil, maple syrup, cinnamon and ginger.
3: Add the dry ingredients to this and mix well. Add in dates (optional) and mix well.
4: Pour into prepared loaf tin.
5: Bake for 35-40 minutes or until a toothpick comes out clean.
6: Once cooled, melt some white chocolate and pour over the cake. Top with gingerbread men.
